Fossa cheese between poetry and flavours: the medieval cheese digging

The wise art of “hiding food” to preserve them from sacks and to conserve them at best dates back to the Middle Age. In the “Fosse” (pits) of a suggestive medieval hamlet of Romagna we will discover the magic and natural spell thanks to which an aged cheese, resting for a long lime, comes back to see the light after a fermentation (which makes it one of the most precious products of the Food&Wine tradition of Romagna).
During the day a dairyman, the owner of the “fossa” to the discovery of the area that gave birth to the medieval Family who ruled the hamlet, will lead us. We will learn their history, their everyday life and eating habits; and we will also discover the affinity between Dante Alighieri and the processing of Cheese in the “Evil pockets of the pit”. Tasting of the different kinds of cheese “frescolatte” (just made) aged in the open air (before the pit) classic and medieval pit placing (with grain of wheat) and with truffle. (Validity: Yearlong)

Note Well: the third Sunday of November you can become a real “medieval dairyman” by taking part to the cheese digging!
